For the shrub..

12 elderflowers (stalks removed)

1 rind of an unwaxed lemon

200g sugar

130g cider vinegar

350 boiling water


1. Add all the ingredients into a bowl, pour over boiling water, mix and leave to cool.

2. after its cool, filter liquid and place in a glass bottle and store in the fridge up to 3 months.

For the cocktail

50ml Sippin Beach

50ml elderflower shrub

125ml soda water


1. place Gin & shurb into a cocktail shaker with ice.

2. pour into a highball glass ands top with soda water, garnish with fresh elderflower
